This time…

I made Chicken Teriyaki Noodles for dinner last night and it turned out good actually. I’m so proud! =) I used chicken fillets and had them marinade in teriyaki sauce for about 30mins to an hour, fried them in oil and sauce. Once cooked, I sliced them to bite sized pieces and threw them back in the pan to cook some more.

I used egg noodles; it was my first time using them so I had no idea how they would turn out until after I boiled them. Hehe! After draining, I threw them in the pan with the chicken together with steamed broccoli and cooked and tossed until the teriyaki sauce was well blended. Mm Mmm!

This reminded me of the stuffed chicken I had on Valentine’s Day. Well, obviously that was more tasty. I should make this again just to get it to how I would want it done.

Things I learned:

Cut the extra chicken “fillet” to make a more even chicken breast.
Pound the chicken after butterflying… because I don’t like it fat.. haha!
Season the chicken. Marinade if possible. Just to add more flavor.
Be careful not to over broil!
Stuff it as much as you like. Messy job, but totally worth it.
… and maybe I should make white sauce to pour over the breasts.

Here’s a rough base recipe. Go wild and make it your own. =)

Feta Cheese and Spinach Stuffed Chicken Breasts

1/2 cup crumbled feta cheese
1/2 cup mix of sour cream and mayonnaise
2 cloves of chopped garlic
chopped spinach leaves
4 chicken breasts, boneless and skinless

Mix everything in a bowl except the chicken breasts.
Butterfly the chicken breasts, then pound.
Lay the chicken on foil big enough to wrap it later.
Season the chicken with garlic powder, salt and pepper, or any thing you prefer.
Spoon the filling into the chicken breasts and secure with toothpicks if you want.
Add more seasoning on top. Drizzle with olive oil and lemon juice if you like.
Wrap the chicken with the foil. Place in baking/cookie pan.
Bake in preheated oven 375 degrees F for 20 minutes.
Unwrap. The chicken and filling should be holding together by now.
Sprinkle bread crumbs on the baking pan.
Bake for another 20 minutes or until chicken is cooked (not pink anymore)
Broil for 10 more minutes if you want.

Baking time minutes listed are only my estimate. I forgot if I cooked them longer or shorter. Just keep in mind that you are supposed to cook it so adjust baking time accordingly. *Sorry*
